Ok so you’ve read up on our guide to creating Slow Cooked Freezer Meals (aka Dump Bags)
If not please do start by reading that first 🙂


Now you are looking for the recipes to get started.
First we brought you 14 days of Slow Cooking Freezer Recipes and today we are adding to that with 14 nights of chicken dinners 🙂

We’ve got 14 family friendly chicken meals to hopefully suit all tastes, organised for you with full instructions on how to prepare each of them and full pantry/shopping lists included to make it extra easy for you.

Often the longest process in slow cooking (even as short as it may be) is the preparation time.  The dicing, peeling, measuring and prepping of your ingredients.
Dump bags take the work out of this for you 🙂
Each bag contains all the ingredients of the recipes already prepared and in the bag and any you don’t want to add in advance you simply mark on the outside of the bag with a permanent marker to add on the day when you cook.

If you clearly label your Dump Bags then you just browse your selection, pick the bag you want the day before, pop it in the fridge to defrost overnight then hey presto the next day you dump and run!
Note: Dump bags are NOT intended to be cooked from frozen.  Defrost first 🙂

Ok so where do you begin in creating your bags?

Basic Tips to Remember:

# Use the best quality zip seal bags you can afford for the best seal and least chance of any tears or rips.

# Store meals as flat as you can to save space and for a more even defrosting time.

# When packing foods in to the bag for freezing remove most if not all the air. The air in the bags will cause freezer burn. This is why it is a good idea to use good quality freezer bags so you can also add liquids (tinned tomatoes, stock, soup mix) to fill the gaps between your ingredients. Vacuum sealing the bag is great too if you have that option.

Once you have your bags ready then you need to organise all your ingredients.
First step is to take our shopping/pantry list below and check off what you have in your pantry already and won’t need to buy.
Then go shopping for the rest with our simple list that’s divided into shopping categories for you to make it even easier.

While I tried to keep to a 4 serve average some do make 6 serves, so on these days just store your leftovers safely to enjoy another day, perhaps as a work lunch etc, or use it as an excuse to ask someone over to dinner with you! 🙂
Also note that you can always double this whole shopping list and make double of everything and have 14 freezer meals if you wish!

On average the freezer meals/dump bags will store up to 3 months in your freezer.
Prepare these dump bags with fresh ingredients (ie not meat you’ve already frozen before), then you can always freeze your COOKED meal safely once more to defrost at a later date for leftovers.

– Combine all other ingredients (whisk flour through dressing) and pour over chicken

– Place chicken, onions, carrot, spring onions, and baby corn into the in freezer bag
– In a bowl combine ginger, garlic, cornflour, soy, oyster sauce, sesame and peanut oi and pour into bag with other ingredients
– Seal bag well after removing excess air, note cooking time/temp on bag with permanent marker and lay flat to freeze
– Note on bag to add wombok on cooking day, then to add mushrooms 1hr prior to serving.  Note also to have on hand 350g packet fresh chow mein noodles (or Hokkien noodles) to serve

Recipe #13 –  Sweet Rosy Chicken

– Place chicken in freezer bag
– Combine all other ingredients and pour over chicken
– Seal bag well after removing excess air, note cooking time/temp on bag with permanent marker and lay flat to freeze
– Note on bag to arrange chicken skin up in slow cooker

Recipe #14 –  Chicken and Gravy

– Place chicken in freezer bag – along with optional garlic and onion if adding this
– Combine stock and gravy powder well and pour over chicken
– Seal bag well after removing excess air, note cooking time/temp on bag with permanent marker and lay flat to freeze
– Note on bag to add mushroom on cooking day if including this optional ingredient



SHOPPING/PANTRY CHECKLIST

~Butcher~

2.5kg chicken breast fillets
7kg chicken thigh fillets
2kg chicken pieces of your choice (eg drumsticks or fillets)
8 chicken drumsticks + 1kg chicken drumstick
4 thigh cutlets (skin on, bone in)

~Produce~

Approx 30 cloves fresh garlic (or jar of minced garlic added to grocery items if your prefer)
3cm piece fresh ginger
5 brown onions
1 carrot
1 red onion
1.5 red capsicums
1 green capsicum
500g button mushrooms
150g sugar snap peas
Juice of one lemon
4 Spring onions
I small baby wombok

~Grocery Items~

1 jar taco sauce/salsa
1 x 420g can of condensed cream of mushroom soup
1 x 420g can of condensed cream of chicken soup
1 x 420g can of condensed cream of tomato soup
2 packets taco seasoning
1 x 420g can of crushed tomatoes
1 bottle thousand island dressing
2 x 40g pkt French onion soup
1 x 425ml can apricot nectar
300ml soy sauce
2 tbsp oyster sauce
250ml tomato sauce
1/2 teaspoon sesame oil
1 1/2 tablespoons peanut oil
2 tbsp olive oil
1 chicken stock cube
1L ready made chicken stock (or extra stock cubes)
1 x 440g can of pineapple pieces
cornflour to thicken
flour to coat
250ml honey
175ml Dijon mustard
¼ cup maple syrup
2 tbsp + ¼ cup brown sugar
1 jar apricot jam
1 1/2 teaspoons oregano
1 tsp chilli powder
2 tsp paprika
1 tsp dried rosemary
1/2 tsp ground turmeric
2 tsp curry powder
½ cup gravy powder
Salt and Pepper
1/3 cup tomato paste (or 1 sachet)
1 cup fruit chutney
350g packet fresh chow mein noodles (or Hokkien noodles)
1 x 410g can whole baby corn spears

~Chilled Items~

150g shaved chorizo
4 rashes short cut bacon

~Other Needs~

Permanent Marker/Freezer Marker Pen
Large GOOD QUALITY zip lock bags for freezer. Don’t scrimp on quality. You don’t want them to leak or tear easily as some cheaper brands will.
Measuring cups/spoons + scales
Utensils needed to prep/peal/cut ingredients

  1. In Australia, we are under the impression that you cannot freeze raw meat/chicken and fresh vegetables. Can you clarify this please.

  2. Paulene, this isnt probably related to the above, but I have a lot of recipes from my mum & I’m not sure about whether to reduce the fluid in them or not & how long to cook them for, as some were adapted to microwaving cooking. Can you give me any guidelines please?

  3. What brand of bags are the best I live in a regional area we have Woolies Coles and IGA. I do buy the storage bags for freezing, am wondering it there is a brand that you advise

  4. Thanks Paulene I wondered if they were the ones. I get those when I can. They are putting so many different brands out now, sometimes the Hercules are pushed back or not there.
