Sombrero Chicken

Ingredients
 

  • 1kg chicken pieces of your choice (fillets, drums, wings whatever you like)
  • 1 packet of taco seasoning
  • 1 jar of apricot jam (approx 450g)

Instructions
 

  • Place chicken in slow cooker.
  • Combine jam and taco seasoning well then pour over chicken.
  • Cover and cook on low for 4-6hrs depending on your slow cooker
  • *This was SO yummy!*

  2. I did this tonight with whole chicken breast fillets and the shredded and added them back into the sauce for half an hour. Served in Taco Boats with lettuce, perino tomato halves, cheese, sour cream, avacado and Mexican salsa. Deicious!

  3. Had this tonight. It was soooo tasty and mighty easy to prepare. Had with mashed potato and the sauce was great with it. Definitely have again!!!

    Made this tonight and it was a big hit! So simple and easy.
    Made it with chicken thighs then shredded it and added it back into the sauce. Served in tortillas with sour cream, tomato, lettuce and avocado.

    This is great. We have it in tacos. It is great for lunches the next day too.

  9. made this tonight it was delish kids loved it , we added a little sour cream and served like we would tacos , id add a little more taco seasoning if you like things a little more salty . will be def making again.

    Beautiful, I do mine with drumsticks and serve with rice or potato gems. Eat it about once a fortnight.

    Love this recipe! Used chicken breast (I think thigh would be better though), shredded breast in cooker in last hour and used to make chicken tacos. Delicious and so easy!

  19. My husband and I loved this. We made it with chicken wingettes, as that was all we had. Only three ingridents so it was simple and easy. I cooked it on high for about 4 hours in the slow cooker. Delish. Its been added to our fortnightly meal planner ?.

      I think that would give you similar flavours yep 🙂 No juice though so it’s still a similar consistency to the jam 🙂

    I made it using a low sugar jam so it wasn’t as sweet.

  24. I love this one, I have found different brands of jam changes the flavour. Some make it taste more apricot. I found Cottees or IXL is better. I’m not an apricot flavour fan.

  26. We just used 2 chicken breast and one packet of seasoning and one 250g jar of Cottees jam. Turned out really yummy and served in taco boats with cucumber, capsicum, red onion, avacado and cheese. Fed 4 of us easily ?

  27. Delicious! I used a jar of Beerenberg Apricot jam for this and I made a cheesy mashed potato to serve with it. Sauce was lovely..

    I have made this so many times and it never fails to please. Sometimes I slice up an onion and put that on the base for a little extra boost. I have passed this recipe to so many people to try and never had a single complaint about it. Super easy, not expensive to make and so tasty.

  32. I used apricots that I had stewed and added an onion. For the last half hour I added Asian greens. Totally agree with what everyone says this is simple and so tasty, will definitely be making again.

  33. Would love to try this, is the taco seasoning hot at all? , can’t eat hot spicy food. If so can I sub for something else?

    Made this today, wasnt sure about it as Im not a fan of apricots and my hubby isnt a sweet tooth but OMG, it was delish, I only had home made jam and I added Cayenne pepper as my hubby likes a kick and it was of so good, I think it will certainly be a part of our regular feeds. Love that its so simple, we had ours with veggies. Thanks

    I made this tonight and it was fab, I wasnt sure about making it as Im not a fan of apricots and hubby isnt a sweet tooth but so glad I did we both really loved it, I only had home made apricot jam and I added Cayenne pepper as my hubby likes abit of spice, I will definately be making this a regular in our house, so quick and inexpensive.     5 star for sure. Hubby repeatedly said, yum, delicious and amazing ???
    I cooked with 10 drumsticks and served half with Microwave Mexican rice, carrots and beans. Shredded the remainder for tomorrow nights tea – sombrero chicken , mex rice , lettuce, tomato/ cucumber, sour cream on burritos.

  40. I’ve made this a few times now and it’s delicious every single time. I only use either breasts or tenderloins and it never fails. I serve it with mashed potato, sweet potato and mixed veg. So good.

  41. My absolute favourite dish! It’s my go to for dinner guests. I serve it with mash and greens. I also line the sc with an opened oven bag so no sticky cooker to clean! Forever grateful to Pauline for recipes.

    Super Yummy!
    I have to be honest…. I really didn’t have high hopes for this one, but hey…. 3 ingredients, I’m super lazy sounds like it’s at least worth a try!
    Well geez…. I was just so wrong! This very simple 3 ingredient yummy bomb of flavour is such a winner in our house, I looked up from licking my bowl out, to see my husband doing the same thing!

  46. This is my new favourite chicken dish- it’s absolutely delicious! I made it with 2kg of chicken drumsticks and used 2 jars of jam and 2 packets of taco seasoning. I pulled the meat off the bone, mixed it in with the sauce and served in tacos one night and in burritos the next. Hubby and my 2 year old licked their plates clean!

    This recipe is brilliant and on our fortnightly rotation. Serve with rice, mash and veg or take the chicken off the bone and use in wraps. I have to double or triple (3 x taco seasoning but only 2 x jam is our preference) as the kids love it!

    Absolutely delicious
    Made it for the first time today added 1 diced onion, 1 diced red capsicum, diced celery, and spinach leaves. Served with hash browns. Will definitely be making it again. Yummo!

    Delicious! Not being apricot fans, I wasn’t sure what my kids would think of this but it was a hit and so easy to make. I used stir fry chicken breast and served with salad, I think next time we will have it on rolls.

    Have just found this recipe Am wondering if a marmalade would work in this recipe?

      You could swap to another jam – I’ve found marmalade a little tart in cooked recipes but if you try it I’d love to hear your thoughts on it Wendy 🙂

    This recipe NEVER fails in ny house.
    However I did finish it off by placing the chicken in the oven just long enough to ‘dry/crisp’ up the skin before serving.
    I highly recommend trying this one if you haven’t and are undecided

      Christine you may like to sear yoru chicken first to limit the amount of liquid it will release in your dish. Another option is using the Tea Towel TrickThe ‘Tea Towel trick’ 🙂

    Brunch birthday tea celebration for a wotk colleague! Cue my contribution:

    However, my local WW did not have any apricot🍑 jam on the shelves this time around. So, I substituted with a 1x jar of orange🍊marmalade & 1x jar cranberry sauce, with 2x packs WW taco seasoning mix I opted to use 2kg chicken drumsticks, approx 16 pieces & cooked on low for 6hr, I added a cornflour slurry and did tea towel trick under the lid for last 1hr to reduce too much liquid.
    Chicken literally fell off the bone, delicious & oh so simple!

    Three ingredients, one big flavour hit. 🌮🔥 Chicken breast, taco seasoning, and apricot jam shouldn’t work this well—but they absolutely do. The sweet jam melts into the smoky spice, turning simple chicken into a masterpiece. Easy to make, impossible not to love. Served on Street Tacos 😍

    Made this a few days ago. Followed the recipe exactly. Hubby found it a little bit too sweet….Next time I might add a little lemon juice to cut the excessive sweetness of this dish.

    Sweetness & subtle spice. Very nice meal. I used chicken breast fillets as thats what I had on hand. Added cornflour slurry at the end to thicken & shredded the chicken once cooked. SC low for 6hr
