Mexican Corn Cobs
A delicious slow cooked Mexican corn dish the whole family will love with your next Mexican meal night!
Equipment
- 5L slow cooker
Ingredients
- 9 half corn cobs (fresh) – This number can be adjusted to suit your needs
- 1/3 cup mayonaise
- 150 ml sour cream
- 100 grams Feta (smooth and creamy, mild feta) – I use Lemnos brand
- 1 tbsp taco seasoning
Instructions
- Place corn cobs into slow cooker
- Crumble over feta
- Combine all other ingredients and pour over corn
- Cook on low for 3hrs – mixing occasionally to coat well and break down the cheese as it cooks
