Ingredients

1kg mixed fruit ( sunbeam brand )

185g butter ( not marg )

1/3 cup rum

1/3 cup water

100gr slivered almonds

1/2 teaspoon mixed spice ( or to your taste )

1.5 Tbl golden syrup

165g firmly packed brown sugar

3 eggs ( lightly whisked )

1 1/4 cups plain flour

1/4 cup self raising flour

1/2 teaspoon bicarbonate soda

Directions

Put all the fruit and spice in a bowl and soak with rum and water over night

1Melt golden syrup, butter and sugar in a saucepan and over low heat, stirring.

2(Allow to cool)

3Stir eggs into fruit mix

4Sift dry ingredients into mix.

5Pour cooled golden syrup, butter and sugar into mix.

6Combine well.

7Pour into greased slow cooker

8Set cooker on LOW for 3.5 to 4 hours

9Allow to cool in bowl and it will turn out so easily.

You could do either but I find baking paper the best.
No chance of sticking then 🙂

Hi,
This recipe sounds great but I’ve never baked in my slow cooker. Is greasing the bowl enough or would baking paper help?

I believe you would add the 1/3 cup water to the initial mixture?

As an American, I’m not sure what “golden syrup” is. Is this corn syrup? Also, How do I convert this to teaspoons and tablespoons from grams?

I thought the recipe said 1/4 cup each of plain and self raising, bigger but will cook again. It will be nice with some custard

I did this cake today using a Kambrook 3ltr slow cooker, has been on for nearly 7 hrs, it needs a little longer. Looking forward to trying it, the house has smelt sooooo good all day 🙂

I presume you add the 1/3 cup water to the mixture. Mine took 7 hours to cook.
