Ingredients
 

  • 1kg mixed fruit ( sunbeam brand )
  • 185g butter ( not marg )
  • 1/3 cup rum
  • 1/3 cup water
  • 100gr slivered almonds
  • 1/2 teaspoon mixed spice ( or to your taste )
  • 1.5 Tbl golden syrup
  • 165g firmly packed brown sugar
  • 3 eggs ( lightly whisked )
  • 1 1/4 cups plain flour
  • 1/4 cup self raising flour
  • 1/2 teaspoon bicarbonate soda

Instructions
 

Put all the fruit and spice in a bowl and soak with rum and water over night

  • Melt golden syrup, butter and sugar in a saucepan and over low heat, stirring.
  • (Allow to cool)
  • Stir eggs into fruit mix
  • Sift dry ingredients into mix.
  • Pour cooled golden syrup, butter and sugar into mix.
  • Combine well.
  • Pour into greased slow cooker
  • Set cooker on LOW for 3.5 to 4 hours
  • Allow to cool in bowl and it will turn out so easily.

  1. I did this cake today using a Kambrook 3ltr slow cooker, has been on for nearly 7 hrs, it needs a little longer. Looking forward to trying it, the house has smelt sooooo good all day 🙂

  2. I thought the recipe said 1/4 cup each of plain and self raising, bigger but will cook again. It will be nice with some custard

  3. As an American, I’m not sure what “golden syrup” is. Is this corn syrup? Also, How do I convert this to teaspoons and tablespoons from grams?

  5. Such an easy cake! The only thing I didn’t add was alcohol (because I didn’t have any) so I just used cooled black tea. Also had to cook 7 hours direct in the Crockpot. Everyone loved it, so moist, and I will definitely be making it again.

  6. Treacle instead of golden syrup would make the cake a little darker and richer, but a good substitute for golden syrup if not available, and I would think it is a universal description.

  7. I have a big slow cooker, could I put it in Pyrex bowl, put some water in slow cooker, and cook it in Pyrex bowl.
