Peanut Butter Cookies - Low Carb

Avoiding carbs doesn't have to mean avoiding cookies with these bad boys!! Just 1.5g carbs each 🙂

Ingredients
 

  • 1 cup of peanut butter (I chose smooth but you could do either)
  • 1 egg
  • 1/2 cup of granulated splenda
  • 1 tsp vanilla essence

Instructions
 

  • Combine all ingredients well to form cookie dough
  • If your dough is too moist you can sprinkle another spoon of splenda over and combine but you shouldn't need to
  • Line slow cooker with a sheet of non stick baking paper
  • Roll cookie dough into small balls - about 1-2 tsp each ball
  • I made 24 balls
  • Space balls out over the baking paper and pres each one down lightly with a fork
  • Cook on HIGH for 1hr with The Tea Towel Trick

  1. Hi, I don’t use splenda or other like alternatives. Is there something else that might be suggested. I realise this might change the carbs but another low carb option maybe coconut flour?
