Peanut Butter Cookies – Low Carb 0 0 5 0

Avoiding carbs doesn't have to mean avoiding cookies with these bad boys!! Just 1.5g carbs each 🙂

  • Prep: 15 mins
  • Cook: 1 hr

  • Yields: 24 small cookies

Ingredients

1 cup of peanut butter (I chose smooth but you could do either)

1 egg

1/2 cup of granulated splenda

1 tsp vanilla essence

Directions

1Combine all ingredients well to form cookie dough

2If your dough is too moist you can sprinkle another spoon of splenda over and combine but you shouldn't need to

3Line slow cooker with a sheet of non stick baking paper

4Roll cookie dough into small balls - about 1-2 tsp each ball

5I made 24 balls

6Space balls out over the baking paper and pres each one down lightly with a fork

7Cook on HIGH for 1hr with The Tea Towel Trick

Notes

1Each cookie is approximately 1.5g carbs

If you aren’t concerned with keeping it low carb you can just use sugar 🙂

Hi, I don’t use splenda or other like alternatives. Is there something else that might be suggested. I realise this might change the carbs but another low carb option maybe coconut flour?

All fit in one layer in my 7L rectangular cooker
