Healthy banana, zucchini and date loaf

Ingredients
 

  • 2 eggs
  • 3 mashed bananas
  • 1/2 cup of honey
  • 1 tsp of vanilla
  • 1 grated zucchini
  • Mix altogether
  • 1 cup of whole wheat flour
  • 1 cup of plain flour
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1 tsp of cinnamon
  • (1/2-1 cup of chopped fruit or nuts I used dates)

Instructions
 

  • Mix altogether with wet ingredients ,
  • If mixture seems to dry add in some soy milk (or normal cows milk if you'd prefer) or some olive oil.
  • Cook on high for 2 hours with a tea towel under lid
