Healthy banana, zucchini and date loaf
Ingredients
- 2 eggs
- 3 mashed bananas
- 1/2 cup of honey
- 1 tsp of vanilla
- 1 grated zucchini
- Mix altogether
- 1 cup of whole wheat flour
- 1 cup of plain flour
- 2 tsp of baking powder
- 1 tsp of baking soda
- 1/2 tsp of salt
- 1 tsp of cinnamon
- (1/2-1 cup of chopped fruit or nuts I used dates)
Instructions
- Mix altogether with wet ingredients ,
- If mixture seems to dry add in some soy milk (or normal cows milk if you'd prefer) or some olive oil.
- Cook on high for 2 hours with a tea towel under lid
