250g self-raising flour

pinch of salt

125g shredded suet/ butter

180g currants

80g caster sugar

finely grated zest 1 lemon

finely grated zest 1 small orange

150ml whole milk, plus 2-3 tbsp

custard, to serve


1Combine all ingredients

2Put in a ball of dough, half the size of the greased ramekin.

3Cover with foil and place the lid on your SC 3 hours on high in a water bath filled half way up the ramekins

4Custard, to serve 🙂

Can you do one big one instead of individual ones with this recipe please ?

The recipe makes 4 of them as stated in yields 🙂

So this is the size of a ramekin dish?
Not very big is it, I’d need to make this per person, as opposed to a quarter each.
