Equipment

  • 5-6L slow cooker

Ingredients

  • 2 kg Roast pork (any style)
  • 300 ml bottle of French salad dressing (the herbed vinaigrette style)
  • 5 palm sized sprigs of fresh Rosemary

Instructions

  • Place rosemary on base of slow cooker and sit pork on top
  • Pour over the French dressing
  • Cook on low for 7.5hrs
  • Remove pork from slow cooker and discard fat/rind layer before carving
  • As it's super tender I get best slices using an electric knife
  • Serve with a beautiful fresh salad for a summer meal or roast vegetables and gravy in warmer months
  • Note: Italian dressing can be used instead of French dressing

I made this today with a slow cook pork scotch roast.
    I was a little skeptical ??
But Lordy Lordy… soooo soft, succulent and tender and delicious! I ALWAYS do a mex style pulled pork, but this is even better. New fave! I only had half a bottle of French dressing and it worked just fine. Served with salad, bao buns and dumplings. Get that pork on your fork ?

Cooked this today for Christmas Lunch tomorrow as we do cold meats and salad for Christmas and oh my gosh delicious ? It would also be delicious with roast spuds and Gravy as well. Something so simple and so tasty, and a delicious subtle flavour.
