A sweet soup for winter

650g Sweet Potato, diced
3 cups Corn Kernals
2 Bay leaves
1/4 tspn, Thyme
4.5 cups Vegetable stock
Pinch Cracked Pepper
1Place sweet potato, 2 cups corn kernals, bay leaves, thyme, stock and pepper in slow cooker bowl
2Cook for 8-9hrs on low (Crockpot 3.5L sc)
3Transfer sweet potato and corn to food processor with 1 cup of liquid and blend until smooth
4Return to slow cooker bowl and stir through reserved cup of corn kernals
5Add salt if required
6Continue cooking until corn is heated through
1Those who can have dairy may need like to serve with a dollop of sour cream
