Sweet Potato and Corn Soup
A sweet soup for winter
Ingredients
- 650g Sweet Potato, diced
- 3 cups Corn Kernals
- 2 Bay leaves
- 1/4 tspn, Thyme
- 4.5 cups Vegetable stock
- Pinch Cracked Pepper
- Pinch Salt
Instructions
- Place sweet potato, 2 cups corn kernals, bay leaves, thyme, stock and pepper in slow cooker bowl
- Cook for 8-9hrs on low (Crockpot 3.5L sc)
- Transfer sweet potato and corn to food processor with 1 cup of liquid and blend until smooth
- Return to slow cooker bowl and stir through reserved cup of corn kernals
- Add salt if required
- Continue cooking until corn is heated through
Note--
- Those who can have dairy may need like to serve with a dollop of sour cream
