Ingredients
650g Sweet Potato, diced
3 cups Corn Kernals
2 Bay leaves
1/4 tspn, Thyme
4.5 cups Vegetable stock
Pinch Cracked Pepper
Pinch Salt
Instructions
Place sweet potato, 2 cups corn kernals, bay leaves, thyme, stock and pepper in slow cooker bowl
Cook for 8-9hrs on low (Crockpot 3.5L sc)
Transfer sweet potato and corn to food processor with 1 cup of liquid and blend until smooth
Return to slow cooker bowl and stir through reserved cup of corn kernals
Add salt if required
Continue cooking until corn is heated through
Note--
Those who can have dairy may need like to serve with a dollop of sour cream
