Slow cooked pulled pork with a hint of fruity sweetness and mustard flavours. Simple to prepare and a great all day cooking recipe!

2kg boneless pork shoulder roast
1 large onion, cut into 8
1/2 cup apricot jam
1/4 cup of mild bottle mustard
1 tablespoon wholegrain mustard
1Place half of the onion on base of cooker
2Remove any netting from pork and place pork on the onion pieces - fat side down
3Scatter remaining onion around pork sides
4Combine mustard's and jam together well and brush onto pork, pour over any excess
5Cook on low for 8hrs
6Gently turn over your pork and remove fat layer and discard
7Carefully shred/pull apart the meat (with plastic/silicone tools to protect your slow cooker) and mix the pulled meat through cooking juices/marinade
8When fully cooked the meat will pull apart easily ... I literally use just tongs ... it's that easy
9Serve as pulled pork on burgers, on salad, on pizza, even with side veg. Any way you like to :)
