Pulled Pork On Your Fork

Slow cooked pulled pork with a hint of fruity sweetness and mustard flavours. Simple to prepare and a great all day cooking recipe!

Ingredients
 

  • 2kg boneless pork shoulder roast
  • 1 large onion, cut into 8
  • 1/2 cup apricot jam
  • 1/4 cup of mild bottle mustard
  • 1 tablespoon wholegrain mustard

Instructions
 

  • Place half of the onion on base of cooker
  • Remove any netting from pork and place pork on the onion pieces - fat side down
  • Scatter remaining onion around pork sides
  • Combine mustard's and jam together well and brush onto pork, pour over any excess
  • Cook on low for 8hrs
  • Gently turn over your pork and remove fat layer and discard
  • Carefully shred/pull apart the meat (with plastic/silicone tools to protect your slow cooker) and mix the pulled meat through cooking juices/marinade
  • When fully cooked the meat will pull apart easily ... I literally use just tongs ... it's that easy
  • Serve as pulled pork on burgers, on salad, on pizza, even with side veg. Any way you like to :)
