Pork Tenderloin Fillet with Honey Mustard 0 0 5 0

Soft, tender juicy pork slices cooked in a decadent honey mustard serving sauce

Ingredients

1 - 1.5kg of pork tenderloin fillet (I used 3 long thin fillets)

1/2 cup honey

2T yellow mustard

1T wholegrain mustard

To thicken: 1T cornflour mixed with 1T water

Directions

1I cut each long pork fillet into two pieces, but you can leave them whole if you prefer

2Combine honey and mustards and pour over pork

3Cook on low for 4.5hrs

4Remove pork and set aside to rest while you prepare the sauce

5Place searing slow cooker on stove top (or pour cooking liquids into saucepan on stove)

6Add cornflour slurry and reduce/thicken over heat for 5-10 mins or until thicker and glossy

7While sauce is thickening, slice pork fillets and then pour over the honey mustard serving sauce

8Delicious with roast vegetables or mash and steamed veg
