Pork Tenderloin Fillet with Honey Mustard

Ingredients
1 - 1.5kg of pork tenderloin fillet (I used 3 long thin fillets)
1/2 cup honey
2T yellow mustard
1T wholegrain mustard
To thicken: 1T cornflour mixed with 1T water
Instructions
I cut each long pork fillet into two pieces, but you can leave them whole if you prefer
Combine honey and mustards and pour over pork
Cook on low for 4.5hrs
Remove pork and set aside to rest while you prepare the sauce
Place searing slow cooker on stove top (or pour cooking liquids into saucepan on stove)
Add cornflour slurry and reduce/thicken over heat for 5-10 mins or until thicker and glossy
While sauce is thickening, slice pork fillets and then pour over the honey mustard serving sauce
Delicious with roast vegetables or mash and steamed veg
