Pork Tenderloin Fillet with Honey Mustard
Soft, tender juicy pork slices cooked in a decadent honey mustard serving sauce
Serving: 5
Ingredients
- 1 - 1.5kg of pork tenderloin fillet (I used 3 long thin fillets)
- 1/2 cup honey
- 2T yellow mustard
- 1T wholegrain mustard
- To thicken: 1T cornflour mixed with 1T water
Instructions
- I cut each long pork fillet into two pieces, but you can leave them whole if you prefer
- Combine honey and mustards and pour over pork
- Cook on low for 4.5hrs
- Remove pork and set aside to rest while you prepare the sauce
- Place searing slow cooker on stove top (or pour cooking liquids into saucepan on stove)
- Add cornflour slurry and reduce/thicken over heat for 5-10 mins or until thicker and glossy
- While sauce is thickening, slice pork fillets and then pour over the honey mustard serving sauce
- Delicious with roast vegetables or mash and steamed veg

What is yellow mustard, English or American mustard?
I’d use whatever creamy yellow style mustard you prefer (not wholegrain mustard or mustard powder)
I buy mine in a squeeze bottle in the sauce aisle

Made this as per the recipe & family loved it. Went to make it again the other day and had no honey so swapped it for a jar of apple sauce, was just as good!

Had this last night used pkt pork fillets from Safeway the gravy was delicious cooked for 4 and 1/2 hours
