4x chicken schnitzel (precut & purchased from woolworths)
4x long rasher of bacon (rind removed)
Approx 150g feta, cut into 4x lengths
1/4 cup pine nuts, roast in pan
Handful of baby spinach leaves
1tbsp sundried tomatoes (or to taste)
Garlic butter
1x small brown onion, diced
2x cup white white
2x medium/large potatoes
Cooking twine
Cornflour

11. Roast pine nuts in a pan until they start to brown slightly (roasting is optional, it'll taste great either way)
22. Lay long length of bacon on bench, place schnitzel on one end, spread a small amount of garlic butter on it, sprinkle pine nuts then layer with sundried tomatoes, spinach & feta
33. Roll up & fasten with cooking twine
44. Place in slow cooker with potatoes & diced onion, cover with white wine & cracked pepper
55. Cook for 3-4hrs on high

7Optional: Add a rasher of bacon (diced) into the wine too

9Thicken the sauce with some cornflour/water mixture & pour over the chicken & potatoes, serve with greens
