1. Roast pine nuts in a pan until they start to brown slightly (roasting is optional, it'll taste great either way)
2. Lay long length of bacon on bench, place schnitzel on one end, spread a small amount of garlic butter on it, sprinkle pine nuts then layer with sundried tomatoes, spinach & feta
3. Roll up & fasten with cooking twine
4. Place in slow cooker with potatoes & diced onion, cover with white wine & cracked pepper
5. Cook for 3-4hrs on high
Optional: Add a rasher of bacon (diced) into the wine too
Thicken the sauce with some cornflour/water mixture & pour over the chicken & potatoes, serve with greens
