Veg & chia loaded meatballs

Ingredients
 

Meatballs

  • 1 kg beef mince
  • 1 egg
  • 2 x grated carrot
  • 1 grated zucchini
  • 1 onion
  • 3-4 cloves garlic
  • 1 tsp Dijon mustard
  • 1 tbs Greek yoghurt
  • 1 tbs BBQ sauce
  • 1/2 cup grated cheese
  • 1/2-1 cup breadcrumbs
  • 1 tbs seasonal
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 2 tbs black chia seeds
  • Handful fresh basil
  • S & P

Sauce

  • 2 x tins chopped tomatoes
  • 1 jar home made tomato sauce or pasata

Instructions
 

  • Combine meatball ingredients and mix well
  • Roll into firm balls with wet hands
  • Refrigerate for 1 hour
  • Cook on low 4 hours
  • Served on fettuccine
  • Enjoy

Note

  • My slow cooker cooks fast some may want to cook on auto or high for first hour:)
