Veg & chia loaded meatballs
Always a family pleaser - so moist and delicious!
Serving: 6
Ingredients
Meatballs
- 1 kg beef mince
- 1 egg
- 2 x grated carrot
- 1 grated zucchini
- 1 onion
- 3-4 cloves garlic
- 1 tsp Dijon mustard
- 1 tbs Greek yoghurt
- 1 tbs BBQ sauce
- 1/2 cup grated cheese
- 1/2-1 cup breadcrumbs
- 1 tbs seasonal
- 1 tsp smoked paprika
- 1 tsp cumin
- 2 tbs black chia seeds
- Handful fresh basil
- S & P
Sauce
- 2 x tins chopped tomatoes
- 1 jar home made tomato sauce or pasata
Instructions
- Combine meatball ingredients and mix well
- Roll into firm balls with wet hands
- Refrigerate for 1 hour
- Cook on low 4 hours
- Served on fettuccine
- Enjoy
Note
- My slow cooker cooks fast some may want to cook on auto or high for first hour:)
