Vanilla Slice

Ingredients
 

  • 2 purchased sheets of read made puff pastry
  • 250ml (1 cup) milk
  • 1 vanilla bean, split ( I used vanilla essence instead) *note - 2tsp of essence is equivalent to one vanilla bean*
  • 3/4 cup cornflour
  • 1/2 cup custard powder
  • 220g (1 cup) caster sugar
  • 750ml (3 cups) thickened cream
  • 50g unsalted butter
  • 3 egg yolks
  • Icing sugar, to dust

Instructions
 

  • Step 1
  • Preheat oven to 210C. Line a 23cm square pan with aluminium foil, so that the foil comes up over the sides (this allows you to lift out the slice).
  • Step 2
  • Place each pastry sheet on a baking tray lined with non-stick baking paper, then bake for 8-10 minutes or until golden brown. Set aside to cool.
  • Once cool, place 1 pastry sheet, cooked-side up, in bottom of pan. (You may need to trim it slightly to fit.)
  • Step 3
  • Set slow cooker on high, I used a small one 2.4L
  • Put the cornflour, sugar and custard powder in the slow cooker, and put the milk and vanilla mixture in and whisk until smooth,
  • Then add cream, mix well.
  • Place lid on slow cooker and let it cook for about 1 hour or until it thickens, stirring couple times in between.
  • Add butter, stirring well to combine, then remove from heat and whisk in egg yolks, one at a time, until smooth.
  • Step 4
  • Pour into pastry-lined pan and set aside to cool slightly before placing other piece of pastry, cooked-side up, on top. Refrigerate overnight.
  • Remove from pan, cut into squares and dust with icing sugar.

  1. I made this the other night in my Russell and Hobbs 6L. It took nearly 2 hours to thicken which was incredibly frustrating but aside from that it was so easy to make and so worth it. Hubby took it to work and had at least three individuals approach him independently to say it was the best vanilla slice they have ever had!

  3. Have made this twice now. Delicious!! Kids love it.When cooking the pastry I put baking paper top and bottom and placed another tray on top to stop it rising. Have added this to my to keep recipes.

  4. Pauline whar is butterfat content of thickening cream maybe we can figure out from that no such product in canada
    But we have coffee and whipping cream

  5. for those asking what thickened cream is its also known as double cream, Recipe looks awesome will have to give it a try

  7. Thickened cream is minimum 35% fat, and has gelatin added to make it thicker. It’s not like double cream or “pure” cream that has a much higher fat content.

    Thickened cream… so whatever cream you use in your country to beat with a fork or beater to make thicker to put on scones or sponge cakes etc

  9. Just want to know it says to whisk in egg yolks when still hot is this right thought it would scramble them pls help

  10. Absolutely delicious! Just under 1 hour to cook the custard in my 7litre Slow Cooker. It went a little clumpy as I added some extra custard powder after the cream, it didn’t matter in taste 😁

    I made it the traditional way by actually making up the icing (mix icing and boiling water in bowl, pour paste over slice THEN refrigerate) – it didn’t seem right to just dust it.

    10/10 recipe. Will make this next time I have guests 😁🥰

    Was absolutely amazed with how well this recipe turned out., it’s always been a favourite in our household. If you haven’t tried it definitely give it a go you won’t regret it

  12. So easy to make and so delicious. I used a larger tray so the slices aren’t as high and cut them into smaller portions. Family loved them.
