Rich Lamb Shanks
A rich tender lamb shank recipe, gently spiced.
Serving: 4
Ingredients
- 500 ml Chicken Stock
- 500 ml Red Wine
- 2 tspn dried Rosemary
- 2 tspn dried Thyme
- 2 tspn minced Garlic
- 1 tspn minced Ginger
- 2 tspn wholegrain Mustard
- 1 tin Cherry Tomatoes
- 1 finely chopped Onion
- 1 finely chopped Celery Stick
- 1 cup chopped Mushrooms
- 2 tspn Basil
- 125ml mint sauce
- 1 x 400g can peas and carrot
- 4 bay leaves
- 2 tspn minced chilli
- 4 Lamb Shanks--
- 3 heaped tblspn Cornflour
- 4 heaped tblspn Gravy Powder
Instructions
- Add & mix all ingredients except Cornflour & Gravy Powder to Slow Cooker, set to Low for 7 hours,
- Add blended Cornflour & Gravy Powder, cook a further hour on high.
- Times can be shorter, serve with mash & greens to suit.

How many lamb shanks go in this recipe?
It looks to be 6 in the photo but I’m sure it would adapt to however many you need 🙂
Can you use stock instead of wine
Yes stock is a common substitute for those who don’t like to cook with wine 🙂
I work on covering the shanks in liquid, & have used up to 1 litre stock & 1 bottle of Red Wine for 7 shanks. I have also removed the shanks & simmered the liquid to reduce before adding the thickeners.
