Just Another Potato Bake
This is my basic vegetarian option. It can be varied by adding bacon and or shredded spinach with the onion layer.
Serving: 6
Ingredients
- 4 medium red skinned potatoes thinly sliced, unpeeled
- 1 medium sweet potato thinly sliced, unpeeled
- 1 red onion thinly sliced
- 2 cloves garlic, crushed
- 600ml cooking cream
- 1 tsp fresh ground pepper
- 1 Tbs freshly chopped parsley
- 1 cup grated cheddar cheese
- 1 tsp smoked paprika
- Extra parsley to garnish
Instructions
- Grease a 5.5 litre slow cooker bowl.
- Cover base of cooker with a layer of potato. Follow with a layer of sweet potato, then about a third of the onion. Repeat layers of potatoes, sweet potato and onion, finishing with potato.
- Combine cream, pepper, garlic, parsley and 1/2 tsp smoked paprika.
- Pour over the potatoes.
- Cover with a tea towel under the lid.
- Cook Low 3-4 hours, til potato is soft.
- Combine remaining paprika with the cheese and sprinkle over potato mix.
- Cook a further 30 minutes on Low still with tea towel in place.
- Serve with extra chopped parsley to garnish.
