Rainbow Frittata Slice (Vegetarian)

A small goodness packed frittata for the 1.5L slow cooker

  • 6 eggs. whisked
  • 1 cup of grated zucchini
  • 1 handful baby spinach leaves, sliced into thin strips
  • 1/2 red onion, grated
  • 6 cherry tomatoes cut into quarters
  • A small 125g can corn kernels, drained
  • Salt and Pepper to season


  • Add all vegetables and salt and pepper to the whisked eggs and mix to combine
  • Line a 1.5L slow cooker with baking paper
  • Pour in mix and cook on HIGH with tea towel trick in place for 2hrs or until set in centre


  • You can use a larger slow cooker but it will be much thinner so will cook faster. Whatever size cooker you use just be sure it's set in the centre - if it is it will bounce back lightly when touched there
  • If you are following the WW Weight Watchers plan this is 0 pts on the blue program
  • You can add 150g diced bacon to this also if you do not wish it to be vegetarian.
