1 handful baby spinach leaves, sliced into thin strips
1/2 red onion, grated
6 cherry tomatoes cut into quarters
A small 125g can corn kernels, drained
Salt and Pepper to season
Instructions
Add all vegetables and salt and pepper to the whisked eggs and mix to combine
Line a 1.5L slow cooker with baking paper
Pour in mix and cook on HIGH with tea towel trick in place for 2hrs or until set in centre
Notes
You can use a larger slow cooker but it will be much thinner so will cook faster. Whatever size cooker you use just be sure it's set in the centre - if it is it will bounce back lightly when touched there
