Portuguese Chicken – Low Carb 0 0 5 0

A recipe I created for my low carb loving wife to surprise her with a lovely dinner xx

  • Prep: 15 mins
  • Cook: 3 hrs 30 mins
  • 15 mins

    3 hrs 45 mins


1 tsp cracked black pepper

1 red chilli, deseeded and finely chopped

1/2 tsp paprika

2 tsp crushed garlic

1 tsp fine grated orange rind

1/4 cup of fresh squeezed orange juice (or good quality 100% bottled juice)

2 tbsp red wine vinegar

1kg skinless chicken thigh fillets (whole)


1Place pepper, chilli, paprika, garlic, rind, orange juice and vinegar in a bowl and combine

2Add thighs to bowl and coat thoroughly

3Remove thighs but reserve the liquid

4Seal thighs in searing slow cooker or on stove top

5Add thighs to slow cooker if not already in one and pour over reserved liquid

6Cook on HIGH for 3.5hrs

7Serve with salad of your choice for a great LOW CARB meal :)

Is there a need to brown first?

Sure you could
I prefer thighs as they are juicier in slow cooking (and I don’t cut any bits off lol) but by all means use breasts if you prefer 🙂

Would chicken breast work as well ? Totally overwhelmed with thighs as feel I have to cut all the “bits” off!
