Portuguese Chicken - Low Carb

Ingredients
1 tsp cracked black pepper
1 red chilli, deseeded and finely chopped
1/2 tsp paprika
2 tsp crushed garlic
1 tsp fine grated orange rind
1/4 cup of fresh squeezed orange juice (or good quality 100% bottled juice)
2 tbsp red wine vinegar
1kg skinless chicken thigh fillets (whole)
Instructions
Place pepper, chilli, paprika, garlic, rind, orange juice and vinegar in a bowl and combine
Add thighs to bowl and coat thoroughly
Remove thighs but reserve the liquid
Seal thighs in searing slow cooker or on stove top
Add thighs to slow cooker if not already in one and pour over reserved liquid
Cook on HIGH for 3.5hrs
Serve with salad of your choice for a great LOW CARB meal :)
