Pork & Veal Meatballs
Serving: 2
Ingredients
- 600g Pork - Veal mince
- 1 Onion (finely chopped)
- 1 Carrot (Grated)
- 1 Zucchini (Grated)
- Garlic (As much or as little as you like)
- Handful of Parmesan
- 1/2 cup breadcrumbs
- 1 Egg
- Salt & Pepper
- SAUCE
- 2 x 410g canned tomatoes
- 2 tbsp of tomato paste mix in 1/2 cup water
- Salt & pepper
Instructions
- Mix all the Meatball ingredients together then roll in balls & refrigerate for at least 1hr!
- Brown the meatballs in a little oil then add canned tomatoes, water, tomato paste & salt & pepper!
- Cook on low for 5-6 hrs

Tried for the first time tonight. Only had pork and beef mince in fridge so I used that. Next time will try it with what the recipe said pork and veal mince. Also I added my usual 2 teaspoons dried thyme.
I did replace one of the tins diced tomatoes with a tin of condensed tomato soup. Took 4.5 hrs on low. Plenty of sauce leftover. Hubby gave them 8/10 tonight. Thanks ? jenny P
