Baby’s Chicken Casserole

1 chicken breast

1 large zucchini

1 large carrot

1 sweet potato

1 1/2 cups water

1/4 cup jasmine rice


1Cut zucchini, carrot and sweet potato into medium chunks place in slow cooker with raw chicken breast whole on top.

2Add rice and water cook on low for 3-4 hours .

3When cooked remove chicken breast cut into small pieces mash veg in liquid and add chicken back to slow cooker and serve.

4Meal can be frozen.

Baby approved. Had to add more water. Shoul have cut the sweet potato smaller as it took longer than the carrot and the zucchini went super cooked. But, thats fine!

I think the times would remain very similar for double

If I wanted to double the quantitys would it adjust the time?

My son loves this recipe and it’s super easy too make and freezes well. I’ve also mixed it up a few times by using beef or adding different veggies and it still worked great

I would … it just wouldn’t be aromatic as the jasmine is 🙂
If it was other types just check to be sure it’s cooked through well still
