Baby's Chicken Casserole

  • 1 chicken breast
  • 1 large zucchini
  • 1 large carrot
  • 1 sweet potato
  • 1 1/2 cups water
  • 1/4 cup jasmine rice


  • Cut zucchini, carrot and sweet potato into medium chunks place in slow cooker with raw chicken breast whole on top.
  • Add rice and water cook on low for 3-4 hours .
  • When cooked remove chicken breast cut into small pieces mash veg in liquid and add chicken back to slow cooker and serve.
  • Meal can be frozen.

    My son loves this recipe and it’s super easy too make and freezes well. I’ve also mixed it up a few times by using beef or adding different veggies and it still worked great

  2. Baby approved. Had to add more water. Shoul have cut the sweet potato smaller as it took longer than the carrot and the zucchini went super cooked. But, thats fine!

    Great recipe! Agree with the comment about cutting the sweet potato smaller as it did take longer to cook than the carrot and zucchini. I’ve frozen this in portions ?
