Island Chicken
Serving: 6
Ingredients
- 1kg boneless chicken (I always prefer thigh fillets for slow cooking)
- 1 clove garlic, finely chopped
- 1 small onion, sliced
- 1 440g can crushed pineapple in juice, undrained
- 3/4 cup tomato sauce/ketchup
- 3 tablespoons packed brown sugar
- 3 tablespoons hoisin sauce
- 1 teaspoon grated ginger
Instructions
- Place chicken in slow cooker
- Combine all other ingredients and pour over chicken
- Cover and cook on low for 6hrs approx
- If you desire, thicken the sauce with cornflour prior to serving.
- I serve mine on a bed of fried rice

Very nice. Great for summer. Did it with pork spare ribs.
Delicious & easy and like that there are fewer processed items than some. Quite sweet though & will try omitting the brown sugar next time.
Can the hoisin sauce be omitted or is there a substitute for it? Not a fan of spicy sauces!!
It’s not a spicy sauce or taste to the dish but sure you could leave it out if you prefer 🙂
The family rated this 8.5/10 so will be making this again. I’d read other comments before I cooked it, so halved the amount of brown sugar and it worked for us.
