Thai Peanut Chicken
Serving: 6
Ingredients
- 1kg skinless chicken thigh fillets
- 3/4 cup salsa (I used Jar El Paso mild chunky tomato variety)
- 1/3 cup peanut butter ( smooth or crunchy)
- 2 tbsp fresh squeezed lime juice
- 1 tbsp soy sauce
- 1 tsp ginger
- 1/3 cup rough chopped peanuts
Instructions
- Place chicken in slow cooker
- Combine all other ingredients except nuts and pour over chicken
- Cook on low for 4hrs (depending on your slow cooker)
- Scatter with peanuts before serving
- I served mine with brown rice, steamed green beans and broccolini and fresh lime wedges

Looking through the book, I came across this recipe, and all the ingredients were ones we generally eat – just not altogether.
Thinking I might give this a go, we had it with drumsticks as that was what I had in the fridge, and was incredibly surprised at the taste of the sauce.
A really lovely combination of ingredients that work really well together
Will definitely be making this again and cant wait to try it with the thighs as suggested in the recipe

Fantastic!!! Both toddlers loved it! I love that you could easily change the spice level by using a different salsa. Definitely worth making again!!
Cooked for the first time tonight and…….. loved it. Was easy to put together and very tasty. I would make it with the spicy salsa sauce next time for my partner, as he likes spicy (I do not ?) so then we will both be happy. Definitely one I will cook again. Thank you very much ??
Just tried this one, and…….. loved it. Was a great flavour. Next time I would do a second lot using the hotter salsa for my partners share, as he likes his spicy. Lucky I have more than one slow cooker! Hahaha. Thanks for a great recipe.

I made this last night and it was an absolute hit with every one. It was absolutely delicious and it is so easy to prepare. I used mild salsa and crunchy peanut butter. Next time I will try a salsa with a little more kick in it. I highly recommend this recipe . Super easy and super tasty. Winner winner chicken dinner.

This is one of our favourite family dishes! We always use crushed nuts and have used lemon juice in a pinch.
I have once had to use a cup of passata in place of the salsa and it was still delish!
9 out of 10. It was really delicious. I cut my thigh pieces in half. Served with steamed broccoli and cauliflower. Brown and wild rice.

Have made this two weekends in a row! Plenty of sauce, and I warmed the peanut butter in the microwave to make the sauce easier to stir. I cut the thighs up, and it freezes well. Very easy – great recipe.
Sorry. Wasn’t a huge fan of this one. Taste like it missing something and was watery in texture and flavour.

I can’t say I like or dislike this dish. I found it a little on the bland side for my liking (to each their own though) … I want to like it so I’ll trying to come up with something I can add or adapt so that it becomes a regular family favourite
Yummo! I kept the thigh fillets whole and used a full jar of medium salsa rather than mild (next time I would use the hot salsa for more kick). Served with rice.
Love this recipe. Quick, easy and delicious. I make it every fortnight and freeze it for dinners after long days. Tastes so good.
Made this tonight with chicken breast. I used mild salsa but I think I’d try with a spicier one next time. I had planned to make rice and veg to go with it but was running late getting home so grabbed some hot chips instead and it was delicious. Will make again for sure.

You could double the other ingredients Christine to double the sauciness of it 🙂
could I add a can of coconut cream or milk. or would a can of crushed tomatoes be better to make it more saucer?
You could try that yes 🙂
If you add some coconut cream etc to it first just add 1-2 tsp cornflour to it first to prevent splitting
