Mexican Scrolls

Ingredients
- 2 sheets of ready made puff pastry, defrosted enough to work with
- 1 and 1/2 cups of taco mince (see recipe below)
- 1 cup of grated tasty cheese
- 1 egg, beaten
Instructions
- Line slow cooker with baking paper and give light spray of non stick oil spray
- Lay out each sheet of puff pastry on clean bench surface
- Top each sheet with 3/4 cup of pre prepared taco mince spread out over pastry sheet and scatter with 1/2 cup tasty cheese each sheet
- Roll each sheet from one side to the other into a tight log roll
- Lay log roll on cutting board and cut into slices approximately 2 cm thick
- Lay each slice down flat in slow cooker, close together
- Brush egg on top of scrolls lightly with pastry brush to assist browning (you won't need all of the egg)
- Cook with Tea Towel under lid
- Cook on HIGH for 1.5hrs - it took this long for pastry to crisp up due to the moist meat filling

Hi Pauline, am interested in doing this for lunches etc. Do you remember what size slow cooker you used and did you have to do two ‘batches’ please.
I used my Breville 7L and did two batches 🙂

Love making this. But not sure what I’m doing wrong, but it falls apart before I get it in the slow cooker. I manage to survive a few and they were amazing.
Hi Bernice, you may just have to hold them a little tighter as you lift. You could even pop them in with an egg flip etc to support them underneath if that helps 🙂
