Ingredients
 

  • 1 beef roast
  • 1 Red Capsicum thinly sliced
  • 1 Green Capsicum thinly sliced
  • 1 Red onion thinly sliced
  • 2 packets taco seasoning
  • 1 litre beef stock

Instructions
 

  • Put beef into slow cooker
  • Thinly sliced the Capsicums and Red onion
  • In mixing bowl combine beef stock and taco seasoning and stir
  • Layer capsicum and onion on top of Beef
  • Pour beef stock with taco seasoning mixed in over top (top up with water if needed to cover meat)
  • Place lid on and cook on high for 6hrs
  • Turn down to low and shred meat
  • Leave on low for a minimum of 1 hr to let flavours soak through meat.

  1. made this for the first time for my daughters 21st with 1.4kg of brisket. It was a hit and Delicious. I added more taco seasoning as it came from a jar from Costco not a packet so about 90gms went in. Next time will added jalepenos for the last hour to add a little bit of a kick. used the left overs to make pies and pizza yummy
