Hoisin and Peanut Butter Chicken

Equipment

  • 1.5L or 3L slow cooker

Ingredients
 

  • 1 kg skinless chicken thigh fillets
  • 1 tsp minced garlic
  • 1 tsp minced ginger
  • 1 tsp sesame oil
  • 1/4 cup smooth peanut butter
  • 1/4 cup hoisin sauce
  • Optional: Cornflour to thicken

Instructions
 

  • Place chicken into slow cooker. Whole or cut into strips.
  • Combine all other ingredients and pour over chicken.
  • Cook on low for 4hrs
  • In the final 15mins of cooking time, stir through a cornflour and water slurry if you wish to thicken the sauce
  • Serve on fried rice, or with your favourite steamed vegetables.
  • Note: I recommend thigh fillets for best results, however you can swap to breast if you prefer but reduce cooking time by 1hr as it tends to be more dry.

  1. Chicken cooked to perfect texture using the instructions for breast rather than thigh.

    The flavour is nice, but not as full flavoured as I expected. I did use 1.6 kg rather than 1 kg breast and didn’t adjust other quantities so maybe the extra juices from the extra chicken diluted it down. I also used 2 tblspn cornflour and water to thicken rather than 1 so that may have impacted too.

    Will definitely make again because I do like the flavours, will just add more of them next time!! Hopefully will get that nice colour that’s in the above photo, as mine was vey pale.

    Overall a good meal ?

    1. Almost doubling the meat would definitely be the cause of the muted flavours, colours and consistency.
      What I’d suggest Catherine for that volume chicken is to double everything else next time and I think you’ll find the flavours much better 🙂

    Really delicious, especially given there’s are so few ingredients. Next time I’ll double the recipe, the above quantities fed our family of 4 adults with no left overs, which is shame because it was so yummy. ?
    I did add a splash of fish sauce & a chicken stock cube.

    Very nice chicken dish and easy to prepare. I also added a dash of fish sauce and a tsp of chicken stock powder. Served with vegetable stir fried cauliflower rice splashed with some sesame oil.

    This is definitely a recipe that will be cooked again and again at my house. Everyone enjoyed it, the flavours were really delicious.
