Servings 4 -6 people depending on how it's served
- 1 beef roast
- 1 Red Capsicum thinly sliced
- 1 Green Capsicum thinly sliced
- 1 Red onion thinly sliced
- 2 packets taco seasoning
- 1 litre beef stock
Put beef into slow cooker
Thinly sliced the Capsicums and Red onion
In mixing bowl combine beef stock and taco seasoning and stir
Layer capsicum and onion on top of Beef
Pour beef stock with taco seasoning mixed in over top (top up with water if needed to cover meat)
Place lid on and cook on high for 6hrs
Turn down to low and shred meat
Leave on low for a minimum of 1 hr to let flavours soak through meat.
