Healthy Butter Chicken (Paleo Option)

Ingredients
 

  • 4 tbsp of butter (or ghee to make this paleo)
  • 1 kg of chicken
  • 2 tsp Garam Masala
  • 2 tsp Paprika
  • 2 tsp ground coriander
  • 1 tbsp fresh grated ginger
  • 1/4 tsp chilli powder/paste
  • 1 cinnamon stick
  • 6 bruised cardamon pods
  • 400g puréed tomato
  • 3/4 cup coconut milk
  • 1 tbsp lemon juice
  • 250g baby spinach

Instructions
 

  • 1. Add all ingredients except baby spinach to the slow cooker.
  • 2. Cook on low for 6 - 8 hrs
  • 3. Remove cinnamon stick and cardamon pods.
  • 4. Add in baby spinach and cook until wilted.
  • 5. Serve with sweet potato.

    Made this without the Lemon and cooked on low for 4.5 hours also had to thicken it but apart from that it was a very tasty meal.
