Healthy Butter Chicken (Paleo Option)
Serving: 6
Ingredients
- 4 tbsp of butter (or ghee to make this paleo)
- 1 kg of chicken
- 2 tsp Garam Masala
- 2 tsp Paprika
- 2 tsp ground coriander
- 1 tbsp fresh grated ginger
- 1/4 tsp chilli powder/paste
- 1 cinnamon stick
- 6 bruised cardamon pods
- 400g puréed tomato
- 3/4 cup coconut milk
- 1 tbsp lemon juice
- 250g baby spinach
Instructions
- 1. Add all ingredients except baby spinach to the slow cooker.
- 2. Cook on low for 6 - 8 hrs
- 3. Remove cinnamon stick and cardamon pods.
- 4. Add in baby spinach and cook until wilted.
- 5. Serve with sweet potato.

What cut of chicken is this please?
Made this without the Lemon and cooked on low for 4.5 hours also had to thicken it but apart from that it was a very tasty meal.
