Greek Lamb Wraps

Succulent slow cooked Greek lamb, to serve on wraps with salad and a tzatziki dressing!

Equipment

  • 6L slow cooker

Ingredients
 

LAMB

  • 1.5 kg butterflied lamb leg (or boneless)
  • 1 tbsp minced garlic
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp ground cumin
  • 1/2 tsp cracked black pepper
  • Juice of 1 lemon

TZATZIKI DRESSING

  • 1 cup Greek yoghurt
  • 1/2 cucumber (Lebanese or continental), peeled & diced
  • Juice of half a lemon
  • 1 tsp minced garlic
  • 1 tsp dried dill
  • Salt and pepper to season

TO SERVE

  • Tortilla wraps
  • Salad leaves
  • Diced tomato, cucumber & red onion mixed together

Instructions
 

  • Place lamb in slow cooker, skin side down
  • Combine the remaining "lamb" ingredients and spoon/spread this over the lamb
  • Cook on low for 8hrs
  • Meanwhile, combine the "tzatziki" ingredients and blend/blitz together for 1 minute. Season with salt and pepper and keep in fridge.
  • Remove the lamb from the cooking liquids and thin slice or shred the meat
  • Serve the lamb on tortilla wraps with salad and tzatziki for a fresh, zesty, healthy dinner or lunch the whole family will love!

    Mouthwatering! Tender, succulent lamb that was a huge hit with the family. I served it deconstructed accompanied with a Greek salad, pan fried halloumi and lemon & garlic asparagus. The Tzatziki was delicious but the lamb was the real star.
    Husband commented on the silence at the dinner table as the teens tucked in. Lots of compliments from said teens followed and zero leftovers. . A testament to a great recipe! Thanks for this winner Paulene. 10 out 10 ???????? ??

    One of our new favourite recipes and perfect for the hot weather coming our way I added some fresh rosemary and mint to the lamb and used fresh Dill in the dressing and it tasted beautiful and fresh. I also made a traditional Greek salad to go in the wraps including feta cheese and sliced black olives. It really is the perfect combination.
