Greek Lamb Wraps
Succulent slow cooked Greek lamb, to serve on wraps with salad and a tzatziki dressing!

LAMB
- 1.5 kg butterflied lamb leg (or boneless)
- 1 tbsp minced garlic
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp ground cumin
- 1/2 tsp cracked black pepper
- Juice of 1 lemon
TZATZIKI DRESSING
- 1 cup Greek yoghurt
- 1/2 cucumber (Lebanese or continental), peeled & diced
- Juice of half a lemon
- 1 tsp minced garlic
- 1 tsp dried dill
- Salt and pepper to season
TO SERVE
- Tortilla wraps
- Salad leaves
- Diced tomato, cucumber & red onion mixed together
Place lamb in slow cooker, skin side down
Combine the remaining "lamb" ingredients and spoon/spread this over the lamb
Cook on low for 8hrs
Meanwhile, combine the "tzatziki" ingredients and blend/blitz together for 1 minute. Season with salt and pepper and keep in fridge.
Remove the lamb from the cooking liquids and thin slice or shred the meat
Serve the lamb on tortilla wraps with salad and tzatziki for a fresh, zesty, healthy dinner or lunch the whole family will love!
