Garlic and Herb Fish Bites
Serving: 4
Ingredients
- 400 grams Barramundi middle fillets (or fillets of choice)
- 1 whole egg
- 1/2 cup breadcrumbs
- 1/2 teaspoon garlic powder
- 1/4 teaspoon oregano
- 1/4 teaspoon thyme
- 1/4 teaspoon tarragon
Instructions
- Line cooker with baking paper and turn on HIGH (check manual for dry cooking)
- Combine breadcrumbs and herbs in a bowl
- Crack egg in a separate bowl and mix
- Cut/slice fish fillets into bite sized pieces or strips
- Coat fish individually with egg baste using a brush
- Roll individually in crumb mix to coat well and set aside
- Repeat till fish pieces are exhausted
- Place coated fish bites into lined and preheated cooker leaving a gap between each piece
- Use lid with tea towel under and folded up over top
- Cook for 1 hour on HIGH turning after 30 minutes.
- Serve with fresh salad

The Garlic and Herb fish was easy to prepare and put into the slow cooker.
We had the fish with a green salad for an easy meal.
Mr Teenager enjoyed this! (He isn’t a big fish eater)
