Garlic and Herb Fish Bites

  • 400 grams Barramundi middle fillets (or fillets of choice)
  • 1 whole egg
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme
  • 1/4 teaspoon tarragon


  • Line cooker with baking paper and turn on HIGH (check manual for dry cooking)
  • Combine breadcrumbs and herbs in a bowl
  • Crack egg in a separate bowl and mix
  • Cut/slice fish fillets into bite sized pieces or strips
  • Coat fish individually with egg baste using a brush
  • Roll individually in crumb mix to coat well and set aside
  • Repeat till fish pieces are exhausted
  • Place coated fish bites into lined and preheated cooker leaving a gap between each piece
  • Use lid with tea towel under and folded up over top
  • Cook for 1 hour on HIGH turning after 30 minutes.
  • Serve with fresh salad
