1kg beef mince
1 onion, diced
2 carrots, grated
1 zucchini, diced
1 medium eggplant, diced
1/2 cup dried green peas
2 tsp minced garlic
1 x 400g can diced tomatoes (or add fresh diced if you prefer)
1 cup warm water
2 tsp beef stock powder
4 tsp curry powder
3 tbsp tomato paste
1Add mince and vegetables to slow cooker and stir to combine
2Combine water, stock powder, curry powder and tomato paste in a jug and pour into your slow cooker and mix well
3No need to brown mince
4Cook on low for 4-5hrs
5I used a 5L Russell Hobbs cooker
6Serve with bread rolls, creamy mashed potato or sweet potato mash

I love this recipe. As a diabetic who has had a few too many carbs lately I was looking for something healthy and with loads of veg to get me back on track and this is perfect for that. Made mine with sweet potato mash which in my opinion was the perfect accompaniment. Definitely a new favourite.
