Curried Mince - Vegetable Loaded

Ingredients
- 1kg beef mince
- 1 onion, diced
- 2 carrots, grated
- 1 zucchini, diced
- 1 medium eggplant, diced
- 1/2 cup dried green peas
- 2 tsp minced garlic
- 1 x 400g can diced tomatoes (or add fresh diced if you prefer)
- 1 cup warm water
- 2 tsp beef stock powder
- 4 tsp curry powder
- 3 tbsp tomato paste
Instructions
- Add mince and vegetables to slow cooker and stir to combine
- Combine water, stock powder, curry powder and tomato paste in a jug and pour into your slow cooker and mix well
- No need to brown mince
- Cook on low for 4-5hrs
- I used a 5L Russell Hobbs cooker
- Serve with bread rolls, creamy mashed potato or sweet potato mash

I love this recipe. As a diabetic who has had a few too many carbs lately I was looking for something healthy and with loads of veg to get me back on track and this is perfect for that. Made mine with sweet potato mash which in my opinion was the perfect accompaniment. Definitely a new favourite.
