

Cauli Quiche Cups – Low Carb

Low Carb vegetable quiche cups - so easy and SO tasty! Great for lunchboxes too 🙂

Directions
1Pre brown diced bacon in a pan and set aside
2Take 10 silicone cupcake cases (or similar) and spray lightly with non stick oil spray
3Press down firmly 1-2 tablespoons of cauliflower mash in the base of each case
4Combine the bacon, spinach and tomato in a bowl and mix to combine
5Spoon 1-2 tablespoons of bacon mixture into each case on top of the cauliflower
6Whisk together eggs and pour over the top of each one until filled to near top of case
7Carefully place full cases into a metallic based slow cooker (if using a ceramic style slow cooker bowl add a few cms of water in first then sit the cases in the water bath so as not to cook it dry. This can be done with the metallic style slow cookers also if you choose to)
8Cook using The Tea Towel Trick
9Cook on high for approx 45mins or until set

2You could adapt the fillings to your own tastes
3Great for lunchboxes or breakfast on the run
4You could omit bacon for a vegetarian option
