Cauli Quiche Cups - Low Carb

Low Carb vegetable quiche cups - so easy and SO tasty! Great for lunchboxes too :)

Ingredients
 

  • Leftover cauliflower mash - approx 3/4 cup (or you can make your own fresh - recipe below in notes)
  • 150g diced bacon
  • 15 baby spinach leaves
  • 6 semi dried tomatoes in oil
  • 5 eggs

Instructions
 

  • Pre brown diced bacon in a pan and set aside
  • Take 10 silicone cupcake cases (or similar) and spray lightly with non stick oil spray
  • Press down firmly 1-2 tablespoons of cauliflower mash in the base of each case
  • Combine the bacon, spinach and tomato in a bowl and mix to combine
  • Spoon 1-2 tablespoons of bacon mixture into each case on top of the cauliflower
  • Whisk together eggs and pour over the top of each one until filled to near top of case
  • Carefully place full cases into a metallic based slow cooker (if using a ceramic style slow cooker bowl add a few cms of water in first then sit the cases in the water bath so as not to cook it dry. This can be done with the metallic style slow cookers also if you choose to)
  • Cook on high for approx 45mins or until set

Notes

  • You could adapt the fillings to your own tastes
  • Great for lunchboxes or breakfast on the run
  • You could omit bacon for a vegetarian option
