Low Carb Cauliflower Mash
A great LOW CARB alternative to mashed potato
Serving: 4
Ingredients
- 500g rough diced cauliflower florets
- 1 tbsp butter
Instructions
- Place chopped cauliflower florets in slow cooker
- Add 3 cups of warm water (not too hot) to bowl to cover cauliflower
- I used a 1.5L slow cooker for this recipe but you could cook it in larger slow cookers, it just may cook faster 🙂
- Cook on high for 2hrs or until fork tender
- Drain
- Transfer to large bowl, add butter, mash well and serve
- A great low carb alternative to mashed potato

I loved this, but my potato loving boys weren’t so keen. Will do again for me, along with potatoes for my boys. Was great to have an alternative to potatoes when I know that we will be potatoe’d out over Christmas and New Year.
A light an easy alternative to mash potatoes, will be a regular here 🙂
Made this tonight. Was super yum. Very easy to prep and used it as a replacement for potato or rice. Both my 8yr old and 1yr loved it. I loved it too ?
