Turmeric Lentil Soup
Warming and nutritious.
Serving: 4
Ingredients
- 1 cup diced onion
- 2 1/2 cups diced sweet potato
- 2 diced carrots
- 1 diced zucchini
- 2 celery stalks
- 1 cup red lentils
- 1 cup dried soup mix
- 1 tbs avocado oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp ginger
- 2 tsp thyme
- 2 gloves minced garlic
- 1 tsp cumin
- 2 tbs turmeric
- 1 litre vegetable stock
- 2 cups water
- 1 cup almond milk
- 1 cup chopped spinach
- 1 cup chopped parsley
Instructions
- Sauté oil, sweet potato, onion, carrot, garlic, salt, pepper for 2-3 minutes.
- Add thyme, ginger, zucchini, celery, sauté 2-3 minutes.
- Add lentils, soup mix, sauté 2-3 minutes.
- Add cumin, turmeric, stock, water.
- Cook on high 4 hours.
- Add almond milk, spinach, parsley.
- Stir through.
- Serve.

Absolutely delicious!!! Thoroughly recommend! I used normal milk instead of almond milk and didn’t put spinach and parsley in. Will definitely make it again. So good on a cold winter night.
This was delicious. I made up a batch and froze it for work lunches. Worked out great and defrosted/reheated well.
