Banana coconut tapioca pudding

  • 2 large bananas,sliced
  • 400 ml tin of coconut milk
  • 1 litre vanilla flavoured almond milk
  • 3/4 cup tapioca pearls
  • 3/4 cup coconut sugar


  • Add all ingredients into slow cooker.
  • Stir to combine.
  • Cook on high 2 hours


  • Will be runny when ready, but will firm on cooling in the fridge.
  • Coconut sugar can be replaced with another sugar if preferred.

  1. This was amazing only made half the recipe as there is only the 2 of us and that was more than enough. Can’t wait to make this again
