Banana coconut tapioca pudding

Warming and tasty

  • Prep: 10 mins
  • Cook: 2 hrs
  • Yields: 4-6 bowls

Ingredients

2 large bananas,sliced

400 ml tin of coconut milk

1 litre vanilla flavoured almond milk

3/4 cup tapioca pearls

3/4 cup coconut sugar

Directions

1Add all ingredients into slow cooker.

2Stir to combine.

3Cook on high 2 hours

Notes

1Will be runny when ready, but will firm on cooling in the fridge.

2Coconut sugar can be replaced with another sugar if preferred.
