~~Pumpkin Fruit Cake~~
Ingredients
- 1 cup mashed pumpkin
- 125 grams butter
- 3/4 cup sugar
- 2 tbsp golden syrup
- 2 eggs
- 2 cups S/R flour
- Pinch of salt
- 250 grams mixed fruit
- 150 grams raisins
Instructions
- Beat pumpkin,butter & sugar together.
- Then add syrup & eggs.
- Stir through the fruits.
- Then fold through the flours & salt.
- Line & grease Slow cooker.
- Pour in mixture.
- Cook for 2hr 30mins on HIGH
Notes
- I use my 3 litre Slow cooker & it makes 2 small cakes or 5 litre makes 1 large cake.
- lt is really nice with pecan nuts also.
- This cake is so lovely and moist,it is a Family Favourite.
