EmailTweet 16 Full-screen ~~Pumpkin Fruit Cake~~ Cakes, Halloween February 18, 2016 ~~Pumpkin Fruit Cake~~ 0 0 5 0 Prep: 30 mins Cook: 2 hrs 30 mins 30 mins 2 hrs 30 mins 3 hrs Yields: Approx 20 slices Ingredients1 cup mashed pumpkin 125 grams butter 3/4 cup sugar 2 tbsp golden syrup 2 eggs 2 cups S/R flour Pinch of salt 250 grams mixed fruit 150 grams raisins Directions1Beat pumpkin,butter & sugar together. 2Then add syrup & eggs. 3Stir through the fruits. 4Then fold through the flours & salt. 5Line & grease Slow cooker. 6Pour in mixture. 7Cook for 2hr 30mins on HIGH Notes 1I use my 3 litre Slow cooker & it makes 2 small cakes or 5 litre makes 1 large cake. 2lt is really nice with pecan nuts also. 3This cake is so lovely and moist,it is a Family Favourite.
