Paleo Chicken & Veg Soup
Serving: 4
Ingredients
- 2 Tbsp garlic
- 2 med carrots diced
- 1 kg chicken ( thighs or breast would work )
- 1 cup diced pumpkin
- 1 med onion diced
- 1 med sweet potato diced
- 1 litre chicken stock
- 2 cups spinach diced ( I used 1 bok choy )
- 2 Tbsp parsley
- 1 tsp sea salt
- 1/2 tsp oregano
- 1/2 tsp thyme
- 1/2 tsp basil
- 1/2 tsp cracked pepper
- 2 Tbsp lemon juice
Instructions
- Add all ingredients and cook on low for 4 hours.
- Remove chicken and debone and place back into soup.
- If you want it a little thicker remove lid and cook on high for a further hour
