One Pot Bacon and Tomato Pasta
Serving: 4
Ingredients
- 300g Bacon
- 1 brown Onion
- 3 Carrots
- 500g Chopped Mushrooms g
- 60g Baby Spinach
- 200g cherry tomatoes
- 600g jar Pasta sauce
- 400g can diced tomatoes
- 250 large shell pasta
- 1 tbsp garlic granules
- 1 tsp ground ginger
- Sprinkle of Paprika to taste
- 1/4 cup dried basil
- Pepper and salt to taste
- Sprinkle of ground coriander seed
- Sprinkle of chilli flakes to taste
- Parmesan cheese to serve
Instructions
- Chop bacon, onion and carrots.
- Put all ingredients except pasta and cheese in 3L slow cooker.
- Season to your liking.
- Cook on low for 8 to 9 hours
- Increase to high and add pasta with lid off for 1 hour.
- Stir occasionally.
- Serve with parmesan cheese.

Kids really enjoyed this! I used my 4.5 litre slow cooker as I added 500g mince and then a tin of condensed tomato soup with the pasta for the last hour.
