  • 12 thin beef sausages
  • 1 large onion thin sliced
  • 1 x 410g can of crushed tomatoes
  • 1 x 50g packet of Burrito Mexican seasoning
  • 1- 2 cups water (see variations notes below)
  • 1 green capsicum/pepper diced
  • 120g can corn kernels

  • Add raw sausages to slow cooker and top with sliced onion, corn and capsicum
  • Combine burrito mix and crushed tomatoes with 2 cups of water and pour over sausages and onion.
  • Cook on low for 5hrs
  • Serve with mashed potato or rice
  • -Notes
  • I often slice the sausages towards the end (in last hour) then return them to the pot so they go further for a large family
  • Sometimes I’ll combine red and green capsicum, either or both are ok
Another option is to stir through 200ml cooking cream in the final hour to create a creamy sauce version also pictured above – very yummy!
I've also substituted burrito mix for fajita or taco mix instead
I find that different types of sausages require different amounts of liquids to slow cook. Butcher vs different supermarkets etc can seem to kind of 'soak' up more liquids than others so in this recipe I often start with 1 cup, then add more if I notice it not saucy enough as I go along.

I really enjoyed this meal. I didn’t have any capsicum on hand but did have all other ingredients. Was even more delicious the second night. I served brown rice with it

  2. I only used 6 snags, used fajita seasoning and red capsicum left out the corn but added pickled jalapenos because we like a bit of a kick. Served over mashed potatoes. It was a hit with my son and hubby so it gets a big tick at our house.

This recipe was so easy, budget friendly and delicious. My fussy eater came back for seconds and a third serving. The whole family enjoyed them. Will definitely make again ??

  4. My family loved this recipe. I used Fajita seasoning because that’s what I had and it was delicious. Served it with rice

  5. Made this for the first time. It was just for 2 of us so only used 6 sausages, & 1 packet of burrito mix which was 25g. Also used frozen corn & frozen capsicum as I had it in the freezer & just 1 cup of water. It turned out amazing. Really tasty & great for something different. Husband loved it so thats a win. Will make again

“Absolute winner” were the words from my husbands mouth!
Sounds like this will become a regular in our rotation.
Followed the recipe as is – did take the lid off and cooked on high for the last hour to thicken the sauce.
