Mexican Sausages
Serving: 6
Ingredients
- 12 thin beef sausages
- 1 large onion thin sliced
- 1 x 410g can of crushed tomatoes
- 1 x 50g packet of Burrito Mexican seasoning
- 2 cups water
- 1 green capsicum/pepper diced
- 120g can corn kernels
Instructions
- Add raw sausages to slow cooker and top with sliced onion, corn and capsicum
- Combine burrito mix and crushed tomatoes with 2 cups of water and pour over sausages and onion.
- Cook on low for 5hrs
- Serve with rice

- I often slice the sausages towards the end (in last hour) then return them to the pot so they go further for a large family
- You can also serve with mashed potato
- Sometimes I'll combine red and green capsicum, either or both are ok
- I've also substituted burrito mix for fajita or taco mix

I really enjoyed this meal. I didn’t have any capsicum on hand but did have all other ingredients. Was even more delicious the second night. I served brown rice with it
I only used 6 snags, used fajita seasoning and red capsicum left out the corn but added pickled jalapenos because we like a bit of a kick. Served over mashed potatoes. It was a hit with my son and hubby so it gets a big tick at our house.

My family loved this , served over rice.
Made this for the first time. It was just for 2 of us so only used 6 sausages, & 1 packet of burrito mix which was 25g. Also used frozen corn & frozen capsicum as I had it in the freezer & just 1 cup of water. It turned out amazing. Really tasty & great for something different. Husband loved it so thats a win. Will make again

Sounds like this will become a regular in our rotation.
Followed the recipe as is – did take the lid off and cooked on high for the last hour to thicken the sauce.
